Jeph made zucchini fritters and just loved them, and since I love all things zucchini, I took the recipe he used and made it myself! Here is the in-progress photo op:
They turned out just fine and were easy to make, but I thought they were lacking in some flavor to me. I had to salt and pepper them once finished plus serve them with sour cream to give them some decent flavor, so I didn't keep the recipe. With as many zucchini recipes that are out there for different ways to make it, I didn't think this was worth keeping.
