So after trying an "okay" recipe earlier with my new doughnut pan, I hit the JACKPOT with a new one. I wanted to make doughnuts on Christmas morning and looked through a lot of recipes to narrow it down. I picked one more to try before I entered the world of yeast doughnuts. Well no need to look further, this one ROCKS.
The batter was much easier to work with. It isn't as runny as a cake batter, it's thicker like a cookie batter so I had to spoon it into the pan and sorta smush it around to get it even. It made six exactly and they looks great in the pan:

I made two for Andy: one with a powdered sugar/milk glaze and one with powdered sugar:
The powdered sugar one looked exactly like one from a store!
I used King Arthur Flour's recipe that I found online. I didn't use pastry flour, just unbleached all-purpose flour. I also did not have buttermilk powder, so I followed the instructions on the recipe to substitute buttermilk for the water. And I didn't actually have buttermilk (as I never do) so I used lemon juice in milk as a substitute (as I always do).
These doughnuts were AWESOME AWESOME AWESOME! Andy really liked them and made lots of yummy noises. Then the next day I took out two plain doughnuts (I don't "top" them until I serve them) and dipped them in melted butter then in a cinnamon sugar mix - and Andy went nuts for them. He said they were awesome and loved them to no end. So that topping was the biggest hit, but the donuts themselves are just delicious.
I think even if you don't have a donut pan you can put them in muffin tins. I would suggest a mini muffin tin and then you can make donut holes!
